La Fiaschetteria is not a restaurant, raclette should never be eaten alone and don’t ask for coffee at the end of the meal.
La Fiaschetteria is an experience, a social way to come together around a table. It is an alpine inn: intimate, warm and bohemian.
Born and raised near the Alps with a childhood that was more French than Italian, Gianni brought those memories of his early years with him to Bergamo and gives us a chance to taste it with a dish that has been a staple hroughout his life: raclette, the real deal.
In pursuit of perfection, Gianni scoured Provence for the best grills, the right potatoes (Amandine potatoes, steamed to keep the flavour intact) and, of course, the perfect Raclette: the cheese that gives the dish its name and creates that unique and unmistakable aroma as it melts.
There is some influence from Bergamo too, however, an addition of no small importance in fact: a selection of local cold cuts is also a key part of the meal.
An excellent selection of pickled vegetables also accompany the meal, only briefly boiled so as not to lose their crunchiness and prepared by Gianni himself.
A warm glass of mulled apple wine is recommended to aid digestion and protect from the cold at the end of the meal.
Although Swiss tradition pairs hot tea with raclette, Gianni blindly adheres to the French paradox that the properties of red wine and the polyphenols it contains are a better solution for good digestion.
And last but not least, a good raclette depends on conviviality and that requires all diners to share the raclette.
Otherwise, the hot grill placed in the centre of the table would become a barrier as opposed to a fulcrum around which to socialise and enjoy a taste of the Alps in Bergamo!
